Thank you for being a loyal customer! Our New York’s on this batch got 5 extra days. They were going to be cut on Thursday, but butcher couldn’t get to them until Tuesday so they ended up at 35 days Dry Aging! The steaks are individually wrapped, but we are selling in groups of 2 so we can hit the correct weight. They will be about .7 lbs on average so about 1.4 lbs or ~22.5 oz for the 2 steaks combined.
Pro Tip on these extended dry aged steaks: There will be a small “blackened” portion on the steak, its very strong flavor and you’ll probably want to trim that off before cooking.
